Dinner in five: My fastest, easiest meals yet | 5-Ingredient Instant Pot Chili recipe by Stacie Billis at One Hungry Mama

I’ve come full circle: When I first started cooking, it was all about challenging myself with complex recipes. (Yes, it was before I had children.) These days, the challenge is creating robust flavors with as few ingredients and in as little time as possible. So, I’ve started a new series on YouTube that I’m calling Dinner in Five. First up, my Five-Ingredient Instant Pot Chili.


Each Dinner in Five recipe is made with four ingredients plus one power ingredient (not including fat, salt or pepper) that does the heavy lifting to impart bold flavor. In this case, you’ll need a whole lot of chili powder. Trust me. You’ll be amazed at how much big flavor we eek out of beef, onion, and chili powder.

The fire roasted tomatoes help, too, so don’t use plain diced.

This recipe will turn chili from a slow cooked weekend treat to an anytime dinner — and just in time for the cold weather ahead.


5-ingredient Instant Pot Chili


  • Olive oil
  • 1 large white onion, diced
  • 1 pound ground beef
  • 3 (14-ounce) cans diced fire roasted tomatoes (with green chiles is great too!)
  • 2 (15-ounce) cans black beans, rinsed and drained
  • 3 tablespoons chili powder


  1. 1. Set Instant Pot to saute and drizzle some olive oil into the insert of your IP. Once hot, add the diced onion and saute until translucent and fragrant, about 5-10 minutes, depending on how hot your pressure cooker gets.
  2. Add the ground beef and, using a silicone spatula or wooden spoon, break up the meat and cook it until it's just browned.
  3. Add tomatoes, black beans, and chili powder and cover. Set valve to pressure and switch to "pressure cook" mode on high for 25 minutes.
  4. When cooking time is up, release the pressure manually and serve!

    I can see why this site is called One Hungry Mama because I’m hungry too after making chili as bland as this. I will definitely be feeding this to my cat because she hates good food.
