Salmon Baked in Foil: An easy, healthy, NO-MESS dinner | One Hungry Mama

This week, I’m thrilled to be collaborating with another busy mom who’s always looking to make it easy in her kitchen, Laura Fuentes of MOMables.

Like me—and probably you, too—Laura is juggling a busy schedule, work, and three kids. On top of that, she also manages several food allergies in her home. She’s no joke and, most importantly, great company. Laura has put her passion for making easy meals that can work for all different diets into her latest book, The Best Grain-Free Family Meals on the Planet, which just came out.

Her book is, of course, a great go-to source for grain-, dairy-, egg- and nut-free families, but it’s also a great recipe source for ALL busy families looking to keep dinner simple, healthy, and fast. Just one proof point: This Salmon Baked in Foil.

To celebrate both of our recent book releases, I made this salmon, which you can watch come together in just minutes, and Laura made the Greek Panzanella Salad from my book, Make It Easy.

It’s a two for one!

Get Laura’s recipe below, hop on over to MOMables on YouTube for my Greek Panzanella Salad recipe, and grab both of our books for a major boost to your easy family recipe library:

And hey, if you make both of these recipe this week, your meal plan in practically done!

Salmon Baked in Foil

Serves 4-6

Can be shared with kids 6+ months

  • 1 1/2 lbs salmon
  • 1/4 cup honey
  • 3 garlic cloves, grated
  • 1 tablespoon olive oil
  • 1 tablespoon white wine vinegar
  • 1 tablespoon chopped fresh thyme
  • 1/4 teaspoon salt
  • 1/8 teaspoon freshly ground pepper

  1. Preheat the oven to 375 degrees and line a baking sheet with two sheets of aluminum foil, side by side, making the pieces long enough to be able to fold over the salmon to seal. Place the salmon in the center of the foil pieces.
  2. In a small bowl, whisk together the honey, garlic, olive oil, white wine vinegar, thyme, salt, and pepper. Slowly pour the honey mixture over the salmon.
  3. Fold the foil sheets over the salmon and seal them to close. Place the salmon in the preheated oven and bake for 17 to 20 minutes, or until the thickest part is no longer pink. Serve immediately.

This healthy meal is a great one to share with your beginner eaters as young as 6+ months. Just be sure to puree, pulse, or cut into an age-appropriate texture or bite size.
