That’s right people: This easy, fresh dinner is the answer and it’s delicious and healthy, too—even if the kids pick around the greens. It’s truly an adaptable meal that you can cook once to feed everyone.

Beth loves having people over and always finds a way to effortlessly whip up meals that work just as well for company as they do a casual family dinner.

She’s kind of a rockstar that way.


New Year, New Dinner: Endive Bechamel recipe | Entertaining with Beth

This week, Beth is making Endive Bechamel, which sounds fancy, but is actually simple home cooking, French-style. It’s a perfect example of why I love Beth so much: Her food is sophisticated and laid back at the same time. I’m not sure how she does it, but I’m glad that she does… because then we have a cheat sheet for doing it, too!


Easy, homemade Taco Seasoning recipe | One Hungry Mama

For my part in Beth’s New Year, New Dinner collaboration, I made a healthy riff on one of my kids’ favorite meals (okay, and one of mine, too): TACOS! The foundation of this skinnier, healthier version of taco salad, I swap in lean ground turkey for beef and sauté it with grated zucchini for extra veg power and homemade taco seasoning, which is SO easy to make.


How to make my Turkey Taco Salad:

For my family of 4, I usually sauté 1 lb of lean, ground turkey meat with one zucchini that’s been grated and squeezed dry of its liquid and double this taco seasoning recipe in 2 tablespoons of oil. Since lean turkey has less natural flavor than ground beef and you’re adding zucchini, doubling the seasoning will give you bigger, better flavor.

Once you’ve sautéed the meat until it is cooked through, let it cool while you assemble the rest of the salad. Toss fresh greens—I use 7- to 10-ounces for my family of 4—with grated cheddar to taste, 1 15-ounce can drained & rinsed black beans, a handful of crushed tortilla chips, 2 cubed avocados, 1/2 a pint of cherry tomatoes that have been quartered, thawed frozen corn to taste (fire roasted, if you can find it!), and chopped cilantro to taste. Then add the meat, dress, and toss one last time.

Any simple vinaigrette will do with this salad (one made with lime juice instead of or combined with vinegar is perfect) or get fancy and use the avocado to make this Avocado Tarragon Dressing instead of adding it cubed. You may not expect it, but the combination works great on this salad.

My kids are into salad, so they eat this as is—sometimes with a dollop of sour cream or Greek-style yogurt on top—but if yours aren’t into salad yet, serve the components separately with a tortilla or extra tortilla chips. You can even blend or chop the turkey-zuchinni sauté with fresh avocado for a nutritious baby meal! Even if you serve this without the greens, the kids will get plenty of veg and you only cook ONE dinner. Plus, you get a killer salad for dinner. It’s a win-win.
