Healthy snack recipe: Vegan-If-You-Want Chocolate Peanut Butter Pudding

Snack time! Or dessert. Either way, this decadent Chocolate Peanut Butter Pudding will satisfy. And, yes, it can easily be made vegan.

This recipe has a secret (or maybe not-so-secret if you’re a smarty pants!) ingredient that makes this pudding super creamy without any dairy. It’s also what makes this treat easy to make. It comes together in 5-minutes with the whirl of your blender.

With little more than honey and chocolate (use dairy-free to keep the recipe vegan), this recipe turns pudding from a sometimes treat to an everyday one. And it’s honestly sweet enough for dessert. I call it a snack, though, because it can be! Normally, I’d make sure to keep something like chocolate pudding only for dessert. But, with this recipe, you don’t have to.

Vegan-If-You-Want Chocolate Peanut Butter Pudding
(Can be shared with kids 12+ mos)*
Serves 4

1/2 cup chocolate chips (use dairy-free chocolate for a vegan version)
1 lb silken tofu
2 tablespoons honey*
1 tablespoon creamy peanut butter
1/2 teaspoon pure vanilla extract

1. Melt chocolate chips in the microwave or using a double boiler. Allow to cool to the touch.

2. Add melted chocolate, tofu, honey, peanut butter, and vanilla to a food processor or powerful blender. Puree until completely smooth. It will be thin and pourable; don’t worry, it will firm up.

3. Transfer pudding to one large or four individual containers, cover, and allow to set in the fridge for at least 30 minutes before serving.

*Note: If you want to share this recipe with children under 12-months-old who are already safely eating tree nuts, be sure to swap in agave for the honey. Honey is never to be served to children under 1-year-old due to risk of botulism.
