Curried Cauliflower Salad with Lentils

I’m thinking turkey, gravy, pies and eating salads, salads, salads. Or, at least, that’s my plan. Starting next week (ha!).

It’s all about balance and I plan to strike one by spending the days leading up to Thanksgiving eating as healthfully as possible. With that in mind, I’ve been rounding up fall salad inspiration. I want there to be no excuse.

Check out my latest favorite fall salads. You can eat them now like me or bookmark some for your holiday table. Many of these would make a lovely addition to a Thanksgiving meal.

Fall salad recipes: Kale Super Salad from Seasons and Suppers

I’ve made a good number of fall salads myself—as you’ll see—but also scoured the internet looking for even more inspiration. I rounded up 9 amazing fall salad recipes from some of my favorite healthy eating blogs at Cool Mom Picks. I’m particularly psyched about this Kale Super Salad (pictured) from Seasons and Suppers made with chopped kale, broccoli, shredded Brussles Sprouts and bacon.

If that sounds good, you’d better check out the other 8 fall salad recipes. They are just as amazing.

Chickpea Fennel Parmesan Salad recipe | One Hungry MamaThis Fennel, Chickpea and Almond Salad is one of my favorites. It’s so simple and the perfect accompaniment to any meal, especially a simple, warm Italian dinner.

Herbed Barley Salad | One Hungry MamaMy simple Herbed Barley Salad is delicious served warm and serves as a salad-side duo. Serve it alongside a roasted chicken for a perfect fall meal.

Golden Beet Salad with Quick Pickled Raisins | One Hungry MamaI call this salad with golden beets, toasted slivered almonds, and quick pickled raisins my Golden Glow Salad. Served on top of a little creme fraiche, this salad is delectable. It admittedly takes a little bit of planing, but you can roast the beets days ahead and the quick pickled raisins come together 1-2-3.

Quick Chinese Chicken Salad with Chinese Mustard Vinaigrette | Cool Mom PicksThis salad is a little bit of a cheat because it’s an all-year-round staple, but I love Chinese Chicken Salad with Mustard Vinaigrette as much in fall as in any other season. It’s a great healthy, one-dish meal that can easily be deconstructed to share with little ones.

Roasted Acorn Squash Salad with Maple Mustard Vinaigrette | One Hungry Mama

I included this Roasted Acorn Squash Salad with Maple Vinaigrette in the Cool Mom Picks round up, but needed to point out again in case you didn’t hop on over. Also: see why you have to get over there?

Oh, one more thing: That salad up top? That’s my Curried Cauliflower and Lentil Salad. So good!
