Back to school lunch ideas: DIY Taco Lunchable

While I’m deep in denial, soaking up the last days of summer while we still have three weeks before school begins in NYC, I know that many of you are in the throes of transitioning to your school routine. Or at least preparing for that. Early mornings, homework, after school activities and, of course, school lunch. Every school day for an entire school year.

It’s a lot, which is why, even though I spend most of these days squeezing my eyes shut, plugging my ears and pretending that I don’t see or hear the school year approaching, I’ve managed to put together a series of back to school lunch recipe videos. (The things I do for you!) The first one was a video with healthy dip recipes for the lunchbox. All three are perfect antidotes for the sandwich blahs. (Believe me, they’ll kick in sooner than you expect.) And now I’m taking on the Lunchable with a DIY version of the every popular Taco Lunchable.

I know that Lunchables and other pre-made lunchbox meals are convenient, plus they have super high kid appeal. Really, I get it. But they come at a high cost: just look at the ingredients and nutrition labels, the sodium in particular. I understand that sometimes you need shortcuts, but I’m hoping that when you see how easy it is to make your own Lunchable you’ll take them elsewhere.

Your kids will be just as excited to open up a homemade make-your-own taco lunch, it’ll taste better, and it’s way healthier. This school lunch idea is a win-win if there ever was one.

    I love this idea – easy and quick with all the food groups represented… love that i could use any leftover meat from dinners, too.

    I don’t see that 4 compartment lunch box on Planetbox.com. The planet box ones are all stainless steel. Could you tell me what the plastic one is that you are using for the taco lunchable?
