{video} Coconut Date Smoothie recipe

Once upon a time I traveled with my husband on a whim. We’d decide at noon to drive out of the city for a quiet night away. We’d gather friends and caravan to a crash pad in the country or at the beach. We’d fly off to Miami for a long weekend of lounging.

And then we had kids.

On one of our trips to Miami those many years ago I had my first coconut date smoothie. Dates? In smoothies? Standard issue now, but a revelation then. I’ll always remember my first sip, as part of a breakfast by our personal outdoor tub.

Times have changed and now I make this smoothie for my little boys. But, every time I have one, I remember young love. Carefree in the sunshine.

I miss those times, though in the ways that matter most, life is even sweeter these days.

Coconut Date Smoothie
(Can be shared with kids 6+ mos)*
Makes 1-2 smoothies

1 banana
2 tablespoons shredded coconut (I prefer unsweetened)
3 pitted dates
1/2 cup almond milk + 1/2 cup coconut cream OR 1 cup coconut milk, plus more to get desired consistency
1/4 teaspoon cinnamon
Pinch nutmeg
Ice

1. Add al ingredients to a blender and blend until smooth. Add more liquid as necessary to get desired consistency. Enjoy!

*Note: This is super healthy for even your littlest eaters, just be mindful that coconut is considered a higher allergen food. If you have any concerns, please consult with your doctor first and read more on introducing high allergen foods to beginning eaters.
