Beef Tacos | One Hungry Mama

If you’ve been following One Hungry Mama for a while, you know that I’m the queen of tacos. If you haven’t been following One Hungry Mama for a while, you’re about to see how I’ve earned the crown.

Tacos are a family cook’s dream meal. Cook a protein, chop some veggies for on top, mash or slice avocado, and dinner’s done. Tacos come together quickly and with whatever you have on hand, from leftover chicken to a stray can of beans. And don’t think that you have to stick strictly to a Mexican or even Latin flavor profile. As you’ll see, in my world, tacos are pretty much any protein and veggies stuffed into a folded flat bread. Greek, Caribbean—whatever goes!

And the best part? Kids love tacos, and grownups do, too. They make a beloved weeknight meal that can easily be on your meal plan in some form week after week. These recipes are proof. Check them out for some healthy taco inspiration!

Jerk Chicken Tacos with Mango Salsa: Bring warm, Caribbean flair to your dinner table with these jerk chicken tacos. And don’t be scared: jerk seasoning doesn’t have to be spicy. Unless you want it to be!

Garlic Lime Shrimp Tacos: If you’re not feeling Caribbean flavors, but want a taste of summer, these shrimp tacos will do the trick. Use a grill pan, sauté or broil the shrimp if you can’t grill outside, and use thawed frozen sweet corn to make the salsa. It may not be the seasonal perfection you’d get with summer ingredients, but it’s a delicious—and much needed—taste of sunshine.

Chili Rubbed Steak Tacos: Among my fastest taco recipes, these come together in less than 20 minutes. For a complete meal, serve with sliced avocado and rice (along with my easiest “refried” black beans if you have a few extra minutes).

Greek-Style Tacos: Swap traditional salsa for a quick topping made of chopped cucumber, tomato, feta cheese, and olives. It’s like a chopped Greek salad wrap with deliciously seasoned ground beef!

Chipotle Sweet Potato, Lentil and Guacamole Tacos: I was floored by how easily these tacos came together and even more shocked by how much my family loved them. Even the picky one. Skip the cheese (and, if you’re super hardcore, the honey, too) and these are deliciously vegan.


Roasted Poblano and Mushroom Tacos | One Hungry Mama
Roasted Poblano Pepper and Mushroom Tacos: These are admittedly more involved thanks to a first step requiring you to roast peppers, but the pay off is BIG. These are my favorite tacos of all time. And you can tell by now that me saying that is a big deal. Roast the peppers up to three days ahead of time and these will come together in a snap.


Potato and Chorizo Tacos | One Hungry Mama
Potato and Chorizo Tacos: You can tell by the photo that these are old school, but sometimes you just gotta go back to your roots. And root veggies! I didn’t realize that white potatoes were nutritious, so imagine my surprise when I learned that these filling tacos offer a well-rounded meal! A little salsa verde and sliced avocado on the side, and you’re good to go.

Homemade Taco Seasoning: If you eat tacos as much as we do please, or even if you don’t, I beg you to make your own taco seasoning. It couldn’t be easier and you can rest assured that your tacos are free of fillers and artificial flavors. Phew!

Homemade Tortillas: Making tortillas is a great kitchen project with kids, especially little ones (they are so easy!). Whip them up on the weekend and make tacos on Monday or Tuesday night. This is an especially good plan if you’re trying to get a picky eater to try tacos or you want to try a new taco filling that you think the kids might not like. Motivation to take a bite of something you made is high and may just make the difference!

    Tacos are our family favorite too…until my four year old’s friend at school told her that her taco lunch was yucky. I want to try ALL of these recipes this year as soon as tacos are back in vogue.
