{video} Rice, Grain & Pasta Lunch Bowls

October 1, 2013

Check out the latest installment of my school lunch video series. This week’s lunch idea is as good for little ones as it is for big kids, teens, and even grown ups!

One of the best parts of my school lunch video series on the One Hungry Mama YouTube channel is all the comments I’ve gotten from high schoolers about wanting more ideas for packed lunches that work for them. How awesome that older kids are looking for healthy lunch options when they can’t find them at school? (Very!)

Since there was no way I was willing to let my teen fans down, I whipped up some easy-to-pack rice, grain, and pasta lunch bowls. The best part of these is that they work just as well for little kids as they do for big ones. In fact, start packing lunches for work, mamas—these are awesome for grown ups, too.

The idea here is simple: layer a carb, a protein, and veggies to get a super well-balanced and perfectly filling lunch. Making these vegetarian is easy. Condiments or dressing are optional. Enjoyment is guaranteed.

In the video, I show how to make a Greek-style Orzo Lunch Bowl and, my kids favorite, a Mexican Lunch Bowl (one version with meat, another without).

These are far from the possibilities. Here are just a few other other options:

* Japanese Lunch Bowl: brown rice and tofu or chicken with edamame, shredded carrots, avocado, and soy sauce or carrot ginger dressing.

* Middle Eastern Lunch Bowl: couscous and chickpeas or leftover chicken with lettuce, chopped tomatoes, and a drizzle of tahini. (Think falafel in a bowl!)

* Thai Lunch Bowl: Rice noodles and tofu or leftover meat with shredded carrots and broccoli with peanut sauce.

* Italian Lunch Bowl: Pasta, tuna and white beans with chopped tomato, red pepper (roasted red pepper if you have it!), and celery with a simple vinaigrette.

Be sure to subscribe to One Hungry Mama on YouTube to get a new video every other Tuesday. And then let us know: What other rice, grain or pasta lunch bowls will you be whipping up?
