Family food find: Chicken Basil Stir Fry

OneHungryMama Chicken Basil Stir Fry

So, you guys know that I’m a fan of Martha. I also happen to love Sarah Carey, the editor-in-chief of Everyday Food. Remember when I first discovered her daily video newsletter? I love it as much today as I did back then. When I’m not in recipe development mode and too wiped from work to be creative in the 30 minutes or so that I have to whip up dinner, I look to Sarah and she serves up dishes like this Chicken and Basil Stir Fry.

One of the great things about Sarah’s cooking is that it adapts more complicated dishes for the family cook who has to whip up dinner under time pressure. She references ethnic cuisine and classic dishes, keeping fast and easy from turning into bland and semi-homemade. Her cooking is big flavor made easy, which is perfect for me these days. Maybe for you, too?

The whole family loved this Thai-inspired Chicken and Basil Stir Fry (can be shared with kids 10+ mos). The hungry baby was a little turned off by the onions (“too stringy!”) and the basil leaves (“no green!”), but we just tune it out. Served with rice and steamed broccoli, there was plenty for him to eat and still get a well rounded meal. Works for me.

If you were ever a fan of Everyday Food, I encourage you to give Sarah’s daily recipe videos a look. I think you might really like them. (Though there’s a meatless section of her video library, you may not get as much out of the subscription if your family is vegetarian.) If you’ve never looked at Everyday Food, but are feeling like you need to quickly build a repertoire of quality, simple weeknight meals you should look at the videos, too. I know that it feels like another email subscription is the last thing you need, but I find that this one’s totally worth it.

If you want to give one of Sarah’s recipes a shot before you subscribe, grab your wok and make this Chicken Basil Stir Fry. We also love this Beef and Snow Pea Stir Fry—I make it all the time these days.

I’m not sure if this counts as a “find” since it’s not a full recipe, but I’m smitten with the 10-minute farro from Trader Joe’s. I just steam whatever vegetables while I boil the farro, toss it all together in a bowl when it’s done, and then concoct a dressing. Last night it was asparagus, peas, green beans (all pre-washed grabs from Trader Joe’s) with lemon parmesan vinagrette. It was so easy! The toddler mostly ignored it, but he did not throw it on the floor, which I will take as a victory. 🙂

Oh, that counts! I found an Italian market around me that sells Pedon (an imported brand from Italy) 10 minute grains: faro, barley, quinoa & barley mixed. Sounds really similar and I LOVE them. I’ve gotta hit Trader Joe’s! Thanks, Brandi!
