Creamy Cauliflower Macaroni and Cheese

Y’all know how I feel about hiding veggies, right? My aversion to the practice has more to do with the fact that it’s a lot of extra work for you with ultimately counterproductive results for kiddo. I’m here to make life easier, after all, especially when easier gets better long-term results. (Yes, long-term people.)

That said, I get the need to be creative with our veggies sometimes. I am, after all, still a parent of two little kids! So, when my mac and cheese with cauliflower florets fell flat, I tried a new version made with cauliflower puree.

Don’t get smart now—I told the kids, straight up, that they were eating cauliflower mac and cheese. And, instead of being surreptitious, I celebrated how extra creamy the cauliflower made the cheese sauce. ‘Cause it did. And it was good. A hit even.

Creamy Cauliflower Mac and Cheese (can be shared with kids 6+ mos)*

*Note: This is a great recipe for the entire family. You can either share just the cauliflower puree (with or without the cheese mixed in) with baby or puree a portion of the finished dish for baby. Once your little eater is 8- to 10-months-old and managing texture, simply cut or mash the pasta into age appropriate bites.

  1. I’m sad to hear the Mac and cheese with florets wasn’t a hit. I’ve been wanting to try a non-puréed veggie-filled Mac and cheese for a while now. I’ll bet the purée did make it nice and creamy though!

    I made this last night and we all loved it. 4yr old went back for not just seconds and thirds and hubby also went back for another serving. Its amazing how the sauce gets so creamy from the cauliflower. This recipe has been saved in my recipe box-thank you!
