I’ve been a little quiet this week—there’s tons going on. The not so great news is that we’re back in mystery diagnosis land. The Hungry Baby is feeling more fatigued (and crabby) than ever, the poor thing, and we’re working more blood tests and specialists to get to the bottom of it. (The good news is that the worst of the scariest things have been ruled out.)
On a happier note, I’ve managed to be productive through another week of doctors and uncertainty. Something very exciting is in the work for you all for the holidays and I cannot wait to share. In the meantime, though, I come bearing pancakes.
The recipe title says it all and the directions are about as straightforward as recipes get. There’s really not much to say. Plus I’m exhausted. And, oh, did I mention that I’m doing a three day juice cleanse starting today?! Don’t ask—I’ll explain when it’s over.
So, yea, I don’t have much for you today. Well, actually, these pancakes are a lot. A lot of tasty, a lot of happy, a lot of cozy, fall, brunch goodness. So I guess I mean that I don’t much to say today.
Enjoy the silence and grab some apples for tomorrow’s breakfast. We’ll reconvene on Monday.
Apple “Pie” Pancakes (can be shared with kids 8+ mos)*
*Note: These are safe for any 8+ month old safely managing soft finger foods; be sure to cut into age appropriate sized pieces. I recommend holding off on syrup for your littlest eaters—the apples make these plenty sweet for your wee ones.
