{nutrition} 6 Ways to Enjoy Veggies at Breakfast

Did you know that some kids and grownups need up to 4 cups of veggies per day?! That’s a whole lotta the good stuff. And—with carb-filled breakfasts and picked-over packed lunches— a whole lotta pressure on dinner.

Serving a dose of veggies at breakfast is my favorite way to keep dinner from bearing the brunt of the day’s intake. I avoid the last minute scramble to over pack dinner with veggies and the kids don’t feel that frantic “eat all your veggies!” pressure at the end of a long day. Instead, we all get to enjoy a well-balanced dinner knowing that we’ve eaten well all day.

  1. I’m a huge fan of omelets! You can add a lot of veggies into this one simple dish. Yum!

    Eggs are a great vehicle to making sure some vegetables get into our breakfast. Whether its a frittata, scramble, omelet, or poached served atop tomatoes and spinach, its just one more reason I love eggs.

    That.Is.Gorgeous. ITA about serving veggies other than at dinner, but we have tended to do just fruit with breakfast, other than spinach in a smoothie once in a while. Thanks for posting this!
