{recipes} Pumpkin, pumpkin, pumpkin

So much going on! And I’ve been too under the weather to keep up and tell you all about it. Let’s start with pumpkins.

Halloween is coming up fast and soon you’ll have a bunch of extra decorative pumpkins lying around. Don’t despair (or waste!). I’ve got you covered. Last week was pumpkin week in The Family Kitchen and I shared two of my favorite savory ways to cook pumpkin:

One-Step Pumpkin Enchilada Sauce

And, a Cooking Light classic, Baked Pasta with Roasted Pumpkin & Bacon (pictured at top). And, yes, you read correctly: cooking light. Check the recipe to understand!

Now, go bookmark some pumpkin recipes while I convalesce. I’ll be back soon, with so much more!
