Whoa nelly! Another busy week. And more strange weather. (No tornados, but bizarrely high temps.) I think I better get used to both.
Anyway… keep reading for details on:
This week was broccoli week at The Family Kitchen. I happen to like broccoli, and so do my boys. But the big Hungry Boy tends to douse his in ketchup, which kind of makes me sick. (I’m not being dramatic! Don’t you think that’s gross?!) So I shared my two surefire ways to get him to eat broccoli sans ketchup: Lunchbox Friendly Broccoli Slaw and Broccoli and Sausage Pizza.

Don’t worry, I also shared a few recipes for those of you not so into broccoli. This Savory Bread Pudding made with kale is an easy make ahead meal that can, literally, be popped into the oven the minute you get home from work or the playground.

This homemade Red Enchilada Sauce is a great all-purpose sauce to have in the fridge. I use it for bean and cheese enchiladas, but you can use it to do anything from saute beans and rice, to jazz up veggies for a quick quesadilla.

And, for when you don’t have anything made ahead of time, I give 5 easy dinners made with leftover chicken, frozen spinach and canned beans (plus some other pantry staples).

Hey there, long time lurker here with my first comment! My daughter is getting married to her lovely mexican gentleman soon, and I’m tasked with doing the wedding arrangements! I thought enchiladas would be a nice snack, so trying to find a good enchilada recipe. What do you think? Any other suggestions?? Anyway, thanks for your hard work as ever…
